Ingredients: For the seitan:

  • 1 1/2 cups vital wheat gluten
  • 1/4 cup nutritional yeast
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 3/4 cup water
  • 2 tablespoons tomato paste

For the BBQ sauce:

  • 1/2 cup ketchup
  • 1/4 cup apple cider vinegar
  • 2 tablespoons molasses
  • 1 tablespoon vegan Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon maple syrup
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, combine the vital wheat gluten, nutritional yeast, smoked paprika, garlic powder, onion powder, and salt.
  3. In a separate mixing bowl, whisk together the water and tomato paste until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  5. Knead the dough for a few minutes until it’s smooth and elastic.
  6. Divide the dough into 4 equal pieces and shape them into chicken drumsticks.
  7. Place the drumsticks on a baking sheet lined with parchment paper.
  8. Bake for 20 minutes.
  9. While the seitan is baking, make the BBQ sauce. In a small saucepan, whisk together the ketchup, apple cider vinegar, molasses, vegan Worcestershire sauce, Dijon mustard, maple syrup, smoked paprika, garlic powder, salt, and pepper.
  10. Bring the sauce to a simmer over medium heat and cook for 5 minutes, stirring occasionally.
  11. After the seitan has baked for 20 minutes, remove it from the oven and brush the BBQ sauce on each piece.
  12. Return the seitan to the oven and bake for an additional 10 minutes.
  13. Remove from the oven and let it cool for a few minutes before serving.
