Slow cooked chuck steak, veggies & roast potatoes…….
I found a recipe online but I made quite a few changes including cut & cooking time etc. I have typed up the tweaked recipe of what I did to get this.

INGREDIENTS:

•1/4 cup plain flour
•1.2kg Chuck steak, cut into 4 large pieces
•2 tablespoons olive oil
•2 medium brown onions, cut into wedges
•6 cloves garlic, halved
•2 medium carrots, coarsely chopped
•1 sweet potato, chopped
•2 tablespoons brown sugar
•2 cups (500ml) Massel beef stock
•1 cup (250ml) Shiraz red wine
•2 tablespoons tomato paste
•2 large bay leaves
•3 large sprigs fresh thyme
•50g butter
•200 grams swiss brown mushrooms halved
•Salt, to season

METHOD:

-Step 1
•Season flour with pepper and salt. Place flour in a large snap-lock bag. Add beef pieces at a time. Seal. Shake to coat. Remove from bag, shaking off excess flour. Transfer to plate. Repeat with remaining beef.
-Step 2
•Heat oil in frying pan over medium-high heat. Cook beef in batches until browned. Transfer to a plate.
-Step 3
•Add carrots, garlic ,onion and sweet potato to pan. Cook, stirring, for 5 mins or until golden. Place half the onion mixture in the bowl of a slow-cooker. Top with beef and remaining onion mixture.
-Step 4
•Add sugar, stock, wine, paste and herbs to frying pan. Bring to the boil then put over beef in slow-cooker.
-Step 5
•Add butter to pan, then mushrooms. Cook, stirring, for 5 minutes or until browned. Add to beef.
-Step 6
•Cover with lid and cook on high for 5 and half hours.
