This Keto Goulash recipe is a flavorful and satisfying dish that fits perfectly into a ketogenic diet. Ingredients:

  • 2 pounds beef stew meat, cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 red bell peppers, seeded and chopped
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 1 tablespoon paprika
  • 1 teaspoon caraway seeds
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1/4 cup sour cream (optional, for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set it aside.
  2. In the same pot, add the diced onion, minced garlic, and chopped red bell peppers. Sauté for 5 minutes or until the vegetables have softened.
  3. Stir in the tomato paste and cook for an additional 2 minutes, allowing it to caramelize slightly.
  4. Return the browned beef to the pot and add the beef broth, paprika, caraway seeds, salt, black pepper, and cayenne pepper (if using). Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let the goulash simmer for 2 to 2.5 hours, or until the beef is tender and the flavors have melded together.
  6. Once the goulash is cooked, taste and adjust the seasonings if needed.
  7. Serve the Keto Goulash hot, garnished with a dollop of sour cream and a sprinkle of fresh parsley.
