This Keto Goulash recipe is a flavorful and satisfying dish that fits perfectly into a ketogenic diet. Ingredients:
- 2 pounds beef stew meat, cut into bite-sized cubes
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 red bell peppers, seeded and chopped
- 2 tablespoons tomato paste
- 2 cups beef broth
- 1 tablespoon paprika
- 1 teaspoon caraway seeds
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 1/4 cup sour cream (optional, for garnish)
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set it aside.
- In the same pot, add the diced onion, minced garlic, and chopped red bell peppers. Sauté for 5 minutes or until the vegetables have softened.
- Stir in the tomato paste and cook for an additional 2 minutes, allowing it to caramelize slightly.
- Return the browned beef to the pot and add the beef broth, paprika, caraway seeds, salt, black pepper, and cayenne pepper (if using). Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let the goulash simmer for 2 to 2.5 hours, or until the beef is tender and the flavors have melded together.
